Mate gourd and bombilla

Mate  is an infusion, containing stimulants including caffeine, prepared by steeping dried leaves of Yerba Mate (Spanish) in hot water.

It is the national drink in Argentina, Paraguay, and Uruguay, and a common social practice in parts of Brazil, Chile, Bolivia.

The method of preparing the mate infusion varies considerably from region.

However, nearly all methods have some common elements: fill the gourd with yerba mate half full, or more or less to taste as you prefer, add hot water (75°-85° C), almost filling the container.
